Previous knowledge: Pupils are familiar with meal service.

Objective: At the end of the lesson, pupils should be able to:

  1. State the importance of food preservation and storage.
  2. State the meaning of food preservation.

Content

Food preservation may be defined as the treatment given to food in order to prevent it from getting spoilt.

Reasons for preserving food

  1. In order to continue to have food in their best condition when they are out of season.
  2. To prevent spoilage of food.
  3. To prevent wastage of food.

Common methods of food preservation

  1. Drying.
  2. Smoking.
  3. Salting.
  4. Freezing and refrigeration.
  5. Adding pepper.

Food storage methods

This is the process of keeping food items in a safe and hygienic condition for future use. The following are types of storage.

  1. Meat safe: these are made of metal. They are used for drying meat or fish.
  2. Covered buckets.
  3. Bags.
  4. Bottles.

Step I: Teacher revises previous lesson with pupils

Step II: Teacher introduces and explain new topic to pupils

Step III: Pupils are allowed to ask questions

Step IV: Teacher writes note on the boards for pupils

Evaluation:

  1. What is food preservation?
  2. List the common methods of preserving foods.
  3. Mention 4 reasons for preserving food.
  4. Name 4 items that can be used for storing foods.

Conclusion: Teacher moves round for inspection, making and correction of notes where necessary.
