Objective: At the end of the lesson, pupils should be able to:

  1. Identify and state the various types of meal service
  2. Discuss the importance of meal service

Content

Meal service is the process of serving meal appropriately. That is, serving food in an appropriate and orderly manner to those who will be eating.

Types of Meal Service

  1. Kitchen service: this is the process whereby, food is dished in the kitchen into plate after cooking and given to an individual to eat, the food can be eaten either in the kitchen or on the dinning table.
  2. Buffet service: it is the process whereby plates, napkins, serviettes, foods and drinks are arranged on the table for people to serve themselves.
  3. Tray service: it is the process whereby food and cutleries are property arranged on a tray.
  4. Traditional service: it is the process of serving a group of people using one bowl, while they sit round the bowl and eat together at the same time
  5. Table service: it is the process whereby the food is served on the dinning table, chairs are provided for the guests to sit on with cutleries arranged properly on the table.

Importance of meal service

  1. It provides for relaxation which is necessary for good health.
  2. It helps people to build relationships among themselves
  3. It makes people to develop interest and acquire skills needed in hospitality e.g. in hotels and restaurant.
  4. It encourages good table manners

Presentation:

Step I: Teacher revises previous lesson with pupils

Step II: Teacher introduces and explain new topic to pupils

Step III: Pupils are allowed to ask questions

Step IV: Teacher writes note on the boards for pupils

Evaluation:

  1. What is meal service?
  2. Mention the types of meal service
  3. State the importance of meal service

Conclusion: Teacher moves round for inspection, marking and correction of notes where necessary.
