The sound /e/  is pronounced when the front of the tongue is raised midway, the lips are loosely spread and slightly wider apart than for the sound /I/. the back of the tongue and the jaw are down a little.

The sound /ei/ is a diphthong. It is a combination of two vowel sounds. It is pronounced when the tongue moves from the position where you say /e/ and glides to the position where you say /i/. The mouth is wide and the jaw moves up.
