Definition of flour

  1. Flour can be defined as the powder derived from the milling of dried foods e.g. when dried yam is milled the powder is referred to as yam flour when dried rice is milled the powder derived is called rice flour when dried beans is milled the powder derived is called bean flour and so-on.

Types of wheat flour

  1. Whole wheat flour or graham flour or entire wheat flour.

This flour has a high fat content because it contains all the constituents of wheat.

  1. Self-raising flour.  As the name implies it rises even when used without the addition of raising agents.  This is because it contains salt and the ingredients of baking powder.
  2. Hard-Wheat flour – This flour has high protein content.  It is produced from wheat which has a hard and brittle endosperm.  It has a granular texture.  This flour is better for making bread.
  3. Soft wheat flour: Wheat with mealier endosperm is used for the productions of soft wheat flour.  Soft wheat flour is specially good for pastries, cookies, cakes.
  4. Composite flour: These are mixtures of two or more types of flours in specific ratio e.g. corn flour can be mixed with wheat or cassava or rice flour.  The resulting flour is called composite flour.
